"You do not need a twenty-dollar novelty cast-iron pan that sits in the back of your cupboard for eleven months of the year. Four pieces of butcher's twine, tied loosely before the bread goes into the oven, and the oven spring sculpts every rib for you."
The Baker's Secret: 4-Step Twine Shaping
Shape a Tight Round Boule
Use your favorite sourdough or enriched yeast dough. Shape it into a smooth, taut round boule on your bench. Dust the top lightly with white rice flour or all-purpose flour so the crust develops contrast.
The 4-Spoke Twine Wheel
Cut 4 equal strands of food-safe unbleached cotton twine (about 30 inches each). Dip them lightly in neutral oil or roll them in flour so they don't stick to the dough. Lay them across a sheet of parchment paper crossing in the center like the spokes of an 8-section wagon wheel. Invert or set your dough ball directly in the center.
Tie Loosely (The Critical Mistake to Avoid)
Bring opposite pairs of twine up and knot them at the top center. Do not tie tightly! Leave about half an inch of slack. As the bread hits the hot oven, the yeast expands rapidlyβthe dough will swell into the twine, creating deep, natural pumpkin lobes without bursting.
Bake, Snip & Stem
Bake in a preheated 450Β°F bread cloche or Dutch oven with the lid on for 20 minutes, then uncover for 15β20 minutes until deeply golden. Transfer to a cooling wire rack. After 15 minutes, snip the top knots with kitchen shears and gently slide the twine away. Press a whole 3-inch cinnamon stick into the center dimple!

Sweet Cinnamon Sugar
Enriched with pure pumpkin puree, brown sugar, and ground cardamom. Brush the warm loaf with melted butter and dust with cinnamon sugar, or drizzle a warm maple glaze over the ridges.
